Brazilian Breakfast

The Brazilian restaurant Senzala is famous locally for their breakfasts, but they’ve always left me feeling disappointed. The idea is brilliant, but after being served tasteless out of season fruits and uninspired mass-produced salsas, Shannon and I have taken to making these ourselves. Plus, it’s a good way to use the salsa we canned.

The basic idea: cut some fruit in half (our favourites are mangoes and avocados), put a poached egg on top, add cheese and salsa, then broil just until it all melts together. With good quality ingredients, this is quick, simple, and delicious. Bom apetite!
